There’s something about Rice Krispies treats that remind me of childhood. Maybe it’s because my sisters and I made them when we were younger. Making them this past weekend for Logan’s birthday, I almost forgot what an easy and fun treat they are for little hands to help with in the kitchen. I can’t wait until Logan is a little bit older and can really take part in the making of these delicious, yet so simple treats.
I’m a huge fan of this recipe, because not only are the Rice Krispies perfectly ooey-gooey, but it’s also got a rich taste without being too over the top. I seriously could eat the entire pan… and the best part: there are only five ingredients and these literally take no time at all to whip up!
INGREDIENTS: (Makes about 12-15 squares)
5 cups Rice Krispies Cereal (an 18 ounce box gives about 10 cups of cereal)
1/2 cup of butter (I used salted butter)
16 ounces of mini marshmallows
1 teaspoon vanilla
1 teaspoon milk (I used almond milk)
DIRECTIONS:
1. Prep your Rice Krispies cereal in pan.
2.. Using a double boiler (or make your own by using a large pot and heat resistant bowl), melt the butter.
3. Add in a teaspoon of milk and teaspoon of vanilla.
4. Add marshmallows to the mixture and slowly melt, while stirring with spatula.
5. Once marshmallows are completely melted and combined with butter mixture take off the heat and add to your cereal.
6. Thoroughly combine marshmallow mixture in pan and let cool for at least an hour.
7. Cut into squares and enjoy!
